Citrus Baked Alaskan Cod

Ingredients

Recipe

  • 2 4-ounce Alaskan Cod (Sablefish) filets (thawed)
  • 1 tablespoon(s) lemon juice
  • 1 teaspoon(s) organic extra virgin olive oil
  • 1/2 organic red onion, halved and thinly sliced into half moons
  • 1 small orange or grapefruit, peeled and sliced
  • 2 tablespoon(s) finely diced sweet bell pepper (green, red, yellow or orange)
  • 2 tablespoon(s) chopped cilantro leaves for garnish
  • salt and pepper
  • fresh lemon

Citrus Baked Alaskan Cod Directions

  1. 1.  Preheat oven to 400 F.
  2. 2.  Place fish in glass or enamel ware baking dish.
  3. 3.  Sprinkle sablefish with salt and pepper.
  4. 4.  Combine lemon juice and oil; brush on all sides of fish.
  5. 5.  Arrange  and finely diced sweet peppers and onion slices over fish; brush with remaining lemon-oil mixture.
  6. 6.  Bake at 400 F for 5 minutes.
  7. 7.  Arrange orange slices over onion.
  8. 8.  Bake 5 to 8 minutes longer or until fish flakes easily when tested with a fork at thickest part.
  9. 9.  Remove and place on individual plates.
  10. 10. Garnish each filet with fresh cilantro leaves and a squeeze of fresh lemon.
