Blueberry Lemon Thyme Sorbet


Blueberries provide super antioxidant cell protection due the presence of pterostilbene and anthocyanadins. The addition of thyme containing the terpenoids rosmarinic acid and ursolic acid the support normal anti-inflammatory function. Blueberries not only have cancer-fighting but also memory supportive properties.

Blueberry Lemon Thyme Sorbet


For 4 Person(s)


  • 3 cup(s) Organic fresh or frozen (thawed) blueberries
  • 1/2 cup(s) Filtered water
  • 2 tablespoon(s) Raw honey
  • 1 teaspoon(s) Lemon zest
  • 2 tablespoon(s) Fresh lemon juice
  • 1/2 teaspoon(s) Thyme leaves
  • 1/8 teaspoon(s) Sea salt

Blueberry Lemon Thyme Sorbet Directions

  1. Variation: Use fresh basil leaves instead of thyme leaves
  2. Place all ingredients in a food processor or blender
  3. Blend until smooth
  4. Place in a glass container in the freezer for about one hour, until hard
  5. Remove and let stand for 10 minutes before serving
  6. Garnish with fresh thyme  sprigs or mint leaves
