Choc-beet cake


This unusual combination works surprisingly well, with the pureed beets providing sweetness and moistness while the dark chocolate masks the beets' slightly earthy flavor. Gluten-free, dairy free and sweetened only with a smidgen of acacia honey, this is a nutrient-packed treat that you can even serve dinner guests, ideally accompanied with raspberry coulis. One of my friends scatters the top with crushed pink peppercorns for added oomph.
