Ingredients

  • 2 tablespoon(s) canola or grapeseed oil
  • 2 Chopped onions
  • 6 Cloves of garlic
  • 6 Cloves of garlic
  • 1 floz tomato sauce
  • 1 oz can of diced tomatoes
  • 1 tablespoon(s) chili powder
  • 2 teaspoon(s) ground cumin
  • 2 teaspoon(s) sea salt
  • 2 cup(s) chopped collard greens
  • 3/4 cup(s) almond butter

African Almond Soup Directions

  1. Heat oil in a large stockpot over medium-high heat. Add onions and sauté for about 5 minutes or until transparent. Add garlic and sauté for one more minute.
  2. Add the water, tomatoes, tomato sauce, chili powder, cumin, and salt. Simmer for 10;15 minutes.
  3. Add collard greens and almond butter and cook 3-4 minutes, stirring constantly to distribute the almond butter.
