Chewy Ginger Molasses Cookies

 This is my latest gluten-free, grain-free concoction. You don’t even need to buy any special flours. All you need are walnuts and a coffee grinder. Just put the walnuts in the grinder and pulse, just until they become a powder. A few small chunks are o.k. This is not technically considered ‘walnut flour’, since it is not finely ground. Rather, it is called ‘walnut meal’.

  • 1 1/2 cup(s) Walnut Meal
  • 2 tablespoon(s) Coconut Oil, melted
  • 1/4 cup(s) Blackstrap Molasses
  • 2 NuStevia Packets
  • 1 tablespoon(s) Ginger
  • 1/4 teaspoon(s) Cloves
  • 1/4 teaspoon(s) Sea Salt
  • 1 1/2 cup(s) Walnut Meal
  • 2 tablespoon(s) Coconut Oil, melted
  • 1/4 cup(s) Blackstrap Molasses
  • 2 NuStevia Packets
  • 1 tablespoon(s) Ginger
  • 1/4 teaspoon(s) Cloves
  • 1/4 teaspoon(s) Sea Salt

Chewy Ginger Molasses Cookies Directions

  1. Preheat oven to 350 degrees F.
    Mix all ingredients together. It will look crumbly at first, but it should all start binding together.
    (If for some reason the dough is too crumbly to stay together, add a tiny bit of coconut oil.)
    Shape into 1/2 inch balls.
    Place cookies onto a baking pan lined with parchment paper.
    Flatten the top of each cookie.
    Bake 8-10 minutes, or until tops of cookies feel solid rather than sticky to the touch.
